Breakfast Pizza


Breakfast Pizza 

(makes 2-3 servings) 


What you need
  • bacon fat or coconut oil (about 1 tbs)
  • red onion, diced*
  • bell pepper, chopped*
  • mushrooms, roughly chopped* 
  • spinach, roughly chopped*
  • 3 whole eggs or 6 egg whites (I like a combo!)
  • cracked black pepper
  • smoked salmon, roughly chopped* 
  • cooked sweet potato, skin on, diced*
  • sliced tomatoes*
*amount up to you

What to do
  1. Preheat oven to 350F.
  2. Add bacon fat or coconut oil to a medium-sized oven safe skillet on medium heat.
  3. Add onions, bell peppers, and mushrooms and cook until soft.
  4. Scramble the eggs/egg whites together in a small bowl and add fresh pepper.
  5. Add spinach to the pan and stir frequently. Cook about 1 minute, then add eggs. 
  6. Remove skillet from heat and sprinkle salmon, sweet potato, and tomatoes over the egg and veggies. 
  7. Place skillet in preheated oven for about 15 minutes.
  8. Serve immediately and store any leftovers in a glass, airtight container up to 3 days.
